Flourless Chocolate Cake Last weekend I had the opportunity to celebrate a delicious birthday with my dear friend Nora. I have been gluten-free for a while (and have been feeling and looking sooo  much better for it), so I was ecstatic to find out Nora had decided to create a totally gourmet gluten-free feast in honor of her own dietary transition.

This recipe was a total hit, which is why I am sharing it with you. I modified it to be sugar free as well, using xylitol (a sugar alcohol derived from birch or corn). I recommend buying the kind made from birch, which is also called birch sugar sometimes. Xylitol can just about be substituted cup for cup with regular sugar, but will not spike blood sugar or cause any of the other funky sugar issues.

Nora’s Birthday French Flourless Chocolate Cake (Gluten-free)

Yield: 12 servings

Ingredients:

7 oz (200 g) semisweet chocolate (45-50 % cocoa)

8 oz (225 g) organic butter, ghee or coconut oil (unsalted)

just under 1 cup xylitol (get the birch kind made from birch, not corn)

5 eggs, separated

1. Preheat oven to 350 degrees F

2. Line a 9 in (23 cm) cake tin with greaseproof or other non-stick paper and butter the tin. (Nora didn’t use the paper)

3. Break the chocolate into small pieces and melt it with butter or ghee over hot water, or in the oven works also

4. Beat the egg yolks with half of the xylitol. I put in all the sugar with the egg yolks and added a couple of tablespoons of warm, not hot water

5. Fold in the melted butter and chocolate mixture – be sure that its not to hot otherwise you cook the eggs

6. Beat egg whites until frothy by using an electric mixer; (gradually add the remaining xylitol,) beating until stiff peaks form.

7. Fold in the beaten egg whites.

8. Bake at 350 degrees until a wooden pick inserted in center comes out clean, approximately 40 minutes.

9. Use a knife to separate the cake from the non-stick paper. Please observe that the cake is quite sticky!

The Flourless Chocolate Cake may be served warm or cold with Cashew Whipped Cream or Coconut Bliss (yumm!). The cream may be dusted with raw cacao powder before serving, and decorated with raspberries or strawberries.

In yoga there is a law that states: “where attention goes energy flows“.

So, whatever you are present to is what is fed, what flowers, what grows.

This can be applied to just about any area of your life.

But what I want to focus on here is how presence relates to your metabolism, energy, digestion and your health.

First, let’s just look at what presence is and how it works.

It has been scientifically proven that we can affect anything simply by observing it and paying attention to it. You can affect another’s behavior by observing them.

We might call this self-consciousness, but this phenomenon has also been shown in animals, planets and more.

You may have even noticed for yourself that when you are in nature, observing the beauty around you, that you experience an almost immediate sense of relaxation and well being.

Well, this emotional responsiveness to what we put our attention on also relates to our body and to our metabolism.

When you eat with awareness and really fully choose presence with your meals, research has shown that you actually assimilate more nutrients, digest better and boost your metabolism.

Digestion, in fact, begins in the head! Wow!

Now, you may be saying “big deal, I don’t have time for this”, or “I don’t really care”.

Well, I encourage you to listen up because if you wish to maximize the nutrition from the food you eat, increase your energy, burn more calories without getting on the treadmill, get more enjoyment from your food and prevent overeating, this is THE tip you can start right away for profound results.

Without presence in the act of eating, you will experience less enzymatic action in the gut and be more likely to experience digestive problems (even if you don’t “feel” them), bowel disorders, lowered immunity, and fatigue. Not to mention you will most likely hold onto weight, have more difficulty losing excess weight AND overeat.

YIKES!

In order to take full advantage of the metabolic power of presence, you must give your full attention to eating. This means no TV, no reading, no computer, no eating while you work or while you drive. Be fully present.

Now, the slight exception to this would be eating in the presence of others. This is fine and even beneficial. Sharing a relaxed meal with family or friends is still supporting the attention being on your food and the act of eating.

Your Action Step:

For the next week be totally 100% present to your meals (and snacks). Remove all distractions and commit to this with your whole self.

Create a relaxing atmosphere alone or with others. If you are at work, step away from your desk.

Notice your food, smell it, look at it, really taste it, chew it, breath it.

Really make this a meditation.

Extra credit: Now if at some point during the week you choose to indulge in or binge on a “forbidden” food, be totally present.

DO NOT leave the building. Pay attention to what happens when you actually scoop the ice cream out of the container into a beautiful bowl, create a calm and comfortable environment and sit down, while enjoying it slowly.

If you are eating low quality ice cream, you will most likely put it down pretty quickly. : )

Even if you are eating the good stuff, you will most likely be satisfied with less.

This is not easy, I know, so be gentle with yourself.

With just a week to go until we reach the spring equinox, the air seems to be filled with a sort of pent up anticipation for what the sights, scents and longer days of spring will deliver. You may notice that awkward phase of lingering winter stagnation mixed with boyant spring lightness. You may be feeling ready to shed some layers, be they physical, emotional or mental. As always, I invite you to set big goals, but remember to take small steps in working towards health, balance and feeling your best.

I am currently on the east coast visiting family and spending considerable time with my stepfather who has just had a stroke. He is certainly recovering with aggressive therapy, but the road will be long and full of hard work. He will get there by taking one step at a time. For me this has been teaching (or reminding) me of both the preciousness of self-care to maintain personal health, and the importance of taking one step at a time even when goals may seem too large to be real.  It is so important to see that grand vision, but stay present with today’s action steps.

I am, of course, a huge believer in prevention. In feeding our bodies fresh, delicious foods appropriate for each individual; moving our bodies as they were intended to move; and just generally being proactive in creating a life that feeds and nourishes in every aspect. We are not here to be lived by life, but to live our lives to the fullest. This includes diving to the darkest depths and rising to the highest highs, and then beginning to find our middle ground where the pendulum begins to swing less extremely.

Spring has traditionally signaled a natural urge to cleanse or purge. Perhaps we clean house, clean our bodies, or feel compelled to make a fresh start in other ways. With the Devana Spring Cleanse Workshop coming up in just a few weeks, I thought it could be nice to offer some small steps to begin moving in the direction of the larger goal. Below are some ideas to begin to infuse a little detox into each day without being too overwhelming. I hope you can all join us for this year’s cleanse whether you come in person or participate online.

Daily Detox
1.    Choose organic. Choosing organic as much as possible is a sure fire way to minimize exposure to the many toxic chemicals that can be used in conventional farming. The higher nutrient content that is in organic produce also assists the body more effectively in its daily detoxification processes. Now sometimes organic just is not available, which means simply staying informed and getting a little savvy. Perhaps you can buy locally grown without pesticides. Or if you do buy conventional, be sure to stay away from these 12 most pesticide laden vegetables and fruits: peaches, apples, sweet bell peppers, celery, nectarines, strawberries, cherries, lettuce, imported grapes, pears, spinach and potatoes.
2.    Get your greens! Dark leafy greens are loaded with cleansing antioxidants and toxic cleaning chlorophyll. Cruciferous vegetables stimulate the production of the detox enzyme glutathione-s-tansferases (GST), which binds to heavy metals, solvents, and pesticides, and eliminates them through stool. If getting these in daily still proves a challenge, try incorporating a green food supplement like Greens First (http://GreensFirst.com/4550). Although not a replacement for the real deal, it is loaded with beneficial antioxidants, vitamins and minerals making it a wonderful “food-based supplement” that can benefit even those eating their greens.
3.    Pre-digest” your food. Our bodies work hard to break down the foods that we introduce into our systems day in and day out. When we blend or juice our food, these processes help break down the nutrients to make them more available. The result is more energy for other things! Remember though, that you should still chew even this liquefied food so that your digestive system understands this is food, not drink. 4.    Nourish your liver. In Chinese medicine, the liver gets the focus in the springtime, meaning we need to give this hard-working organ extra attention and care at this time. There are certain food and herbs that can be used to gently and effectively cleanse and boost the liver. Foods and herbs to try include: Artichoke and artichoke leaf herb, dandelion root and leaf, green tea (as a beverage or supplement), milk thistle seed, and turmeric root.
5.    Cleansing morning beverage. A simple ritual to try is 6-8 oz. lemon water in the morning. You can have it warm or room temperature. With stevia or straight. Lemon water in the morning gently stimulates digestion and elimination and helps alkalize the body. Be sure to rinse or brush your teeth after, because it can be a little acidic on tooth enamel.

These are just a sampling of easy and proactive ways to support you body in what it wants and needs to do. Remember to set your goals, get support, then step one foot in front of the other.

Fun Ways to Use It!

E3Live™ Vegetable Smoothie
1/2 cup tomatoes
1/4 cup chopped red bell pepper
1/4 cup peeled and chopped cucumber
1 1/2 tbs lemon juice
1/2 tbs chopped scallions
1/8 tbs celtic sea salt
1/8 tbs fresh-ground pepper
Optional: 1/8 tbs hot-peppers of any kind
1-3 tbs E3Live™

Combine all in blender and blend until smooth

E3Live™ Mango Smoothie
1 cup fresh mango
1/4 cup young coconut cream (or organic coconut milk)
1-3 tbs E3Live™

optional: a pinch of cardamon and/or ginger adds a nice touch. A touch of fresh orange or lime juice is quite tasty.

Add all ingredients to blender and process until smooth.

E3Live™ Ginger Zing Smoothie
1/2 cup fresh squeezed orange juice

You can gradually change and adapt ingredients, leading to more green color showing, maintaining good taste, and hopefully, they, too, will change their awareness and diet to a healthier level!

5 large ripe, red tomatoes, chopped coarse or fine
3 tbs finely chopped cilantro
1-2 jalapeno chilies, seeded and minced
2 cloves finely minced garlic
1 small purple or white onion, finely chopped
2 tsp lime juice

1 small avocado finely diced pieces (optional)
